It’s not been easy since my diagnosis last year.
I’m a snack addict. I always have been, but since my medication was switched, the snacking has become more of a need than an occasional “in between meals” go-to.
So I’ve spend the last few weeks trying to switch what I eat – bigger meal portions in the hope that it leaves me full enough to not need snacks, and better quality food.
I’ve decided to blog all the new meals and snacks that I’m trying, not because I think I’m the next best chef, but because I know a lot of my readers are also struggling with either a type 2 diagnosis, or in need of some new ideas on what to eat.
Today’s meal / recipe is my current favourite lunch dish – I’ve eaten this almost every day this year and it not only fills me up, but it also makes me happy when I’m preparing it and eating it 💜
Greek Style Salad
Cucumber – sliced and diced
Cherry tomatoes – halved
Juice of half a lemon
A pinch of oregano
Feta cheese – diced
2-3 tablespoons of full fat Greek yogurt
2 Ryvita Simply Sesame crunchy rye breads
Mix the cucumber, tomatoes, (olives, if using) lemon juice and oregano in a bowl.
Next, add the feta cheese, then spoon the Greek yogurt to the side.
Finally, break up the Ryvita breads and sprinkle over the top.
The Simply Sesame rye breads are my new addiction – I think they go really well with the Greek yogurt and if I’m still a bit peckish after I’ve eaten my salad I’ll just have another few spoonfuls of yogurt and have a couple of rye breads to dip 💚
I’m quite surprised that I like them as much as I do, to be honest. When Mr Plinky first picked them up for me (along with the original rye breads) I wasn’t holding out much hope… But they’re so tasty!
I’m hoping that this dish will really help in my effort to lose the 5% off my weight as well as lower my sugar levels from “bad” snacks. Something seems to be doing the trick because in the last week I’ve gone from 79.9 to 79.7… It’s not a major loss, granted, but it’s still a step in the right direction. It’s my weigh day on Wednesday, so I’ll be interested to see how much of a difference the rest of our new meals and snacks have made.
